Paleo Chow - Day 9 {August 6}


Happy Monday!

There has been a lot of chopping going on in the kitchen the past few days. I did, however, take off on Sunday, for the most part. ... Ummm, too little food and too many beers have a tendency to do that to me.  Not much more to say. I paid the price in more ways than one ... which is WHY I am so thankful it's Monday again :)

I gathered up and consumed the following:

3 cups of coffee with sugar and half and half. I'm almost out of half and half and not sure what I will do then ... coconut milk?
3 eggs scrambled and cooked with leftover grilled sausage with peppers, onions and shrooms. It was pretty darn tasty!



a small sample of fruit (strawberry, grapes, melons, pineapple)

salad with radishes, ham, red peppers, hard boiled eggs and balsamic and oil topped it

Dinner was chicken topped with bacon (too lazy to add the shrooms). The original recipe has it broiled with cheese over the top (Aussie Style) but I opted for no cheese on mine. Served it up with some steamed broccoli on the side. This is a huge step for me as I'm not a fan of broccoli ... I added FOUR small clumps to my plate.





All in all, a pretty good day. If you are just starting out (like me!) and really want to get serious, you need to start reading the labels. Amazing at what has SUGAR added ... just about EVERYTHING!  The Honey Mustard Dressing I was going to use? 2nd ingredient was HFCS ... so I whipped up a small batch using olive oil, honey, dijon mustard, basil and a dash of salt. Perfect.
