Started off good ... had a moment of weakness towards the evening but I prevailed! I avoided that bag of chips in the pantry ... and begged everyone in the house to please eat them.
Breakfast:
2 cups coffee with sugar and half and half
3 eggs scrambled with too many shrooms, red pepper, diced onion. I ate it late in the morning so the shroom juice was icky ... sorry.
Lunch:
salad (too small) with a bit of diced deli ham, radishes, shrooms, red pepper and topped with an olive oil/balsamic dressing
Dinner:
leftover chicken breast and the grilled veggies sauteed and heated up in skillet with coconut oil. I made a mini batch of some japanese steak sauce with the homemade mayo, a dab of tomato paste, garlic powder, touch of water, salt, and cayenne pepper. I promise to add the mayo recipe this week! It's a hit, trust me, and so easy to make!
It was a stellar day as far as food goes. I was impressed. I was starving though when I got home from the office at 7pm so the salad was way too small without enough carbs in it ... live and learn!
