We got back on Saturday night and boy, could not WAIT to get back to eating a healthier way ... first off had to clean the kitchen, go grocery shopping ($42 in produce and such) (only canned goods were the small cans of tomato paste!) and stop and see my dad.
Breakfast:
2 cups coffee, scant tsp of sugar and splash of half and half
2 eggs scrambled, cooked in the olive oil.

Lunch
3 scrambled eggs mixed with sauteed shrooms, onions red peppers and deli ham. I was starving at 3pm when I got home and it was the easiest thing to make.
Dinner
Cooked up 10 chicken thighs and 2 WHOLE chicken breast to be divied up during the week. Also grilled onions, peppers and shrooms to serve along with it. Good for 3 to 4 meals for the 2 of us.
Hubby does NOT eat Paleo Chow, so to speak. And I'm not so sure I'm justified in saying I do either, at times. I avoid grains. I avoid sugar. And I avoid processed foods. Avoid dairy for the most part. Hmmm, maybe I do eat Paleo Chow?
The shopping was done at the produce store and I picked up some summer squash, cauliflower (to try a rice like run), spaghetti squash (to try a pasta like run) and all kinds of other odds and ends. Oh, and 4 dozen eggs (I eat 2 to 3 a day, minimum).
